DASH Diet Breakfast Recipe 6 :Spinach & Egg Tacos

 

Ingredients:

– 4 small flour tortillas
– 2 cups baby spinach leaves
– 2 large eggs
– 2 tablespoons olive oil
– Salt and pepper, to taste
– 1/2 cup shredded cheddar cheese
– 1/4 cup salsa

Instructions:

1. Heat a large skillet over medium heat and add the olive oil.

2. Add the spinach to the skillet and cook until wilted, about 2 minutes.

3. Crack the eggs into the skillet and season with salt and pepper. Cook until the whites are set and the yolks are still runny, about 3 minutes.

4. Meanwhile, warm the tortillas in the microwave on a plate for 30 seconds.

5. Place the tortillas on a work surface and divide the egg and spinach mixture among them. Top each with the cheese and salsa.

6. Fold the tortillas over and serve. Enjoy!
