Spinach & Egg Scramble with Raspberries

Ingredients:

– 2 cups fresh baby spinach
– 2 large eggs
– 2 tablespoons olive oil
– 1/4 cup diced onion
– 1/4 cup diced bell pepper
– 1/4 cup diced tomatoes
– 1/4 cup crumbled feta cheese
– 1/2 cup fresh raspberries
– Salt and freshly ground black pepper

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the onion and bell pepper and sauté for 3-4 minutes until the vegetables are tender.

3. Add the spinach and sauté for an additional 2 minutes until the spinach is wilted.

4. Crack the eggs into the skillet and stir to combine with the vegetables.

5. Cook for 3-4 minutes, stirring occasionally, until the eggs are cooked through.

6. Add the tomatoes, feta cheese, and raspberries and stir to combine.

7. Season with salt and pepper, to taste.

8. Serve the scramble warm with your favorite toast. Enjoy!
