Breakfast Salad with Egg & Salsa Verde Vinaigrette
Ingredients:
– 2 cups baby spinach
– 1/4 cup sliced red onion
– 2 hard boiled eggs, peeled and quartered
– 1/4 cup crumbled feta cheese
– 1/4 cup diced tomatoes
– 1/4 cup dried cranberries
– 2 tablespoons extra-virgin olive oil
– 2 tablespoons red wine vinegar
– 1 teaspoon honey
– 1 teaspoon Dijon mustard
– 1/4 cup salsa verde
– Salt and pepper, to taste
Instructions:
1. Place the spinach, red onion, eggs, feta cheese, tomatoes, and cranberries in a large bowl.
2. Whisk together the olive oil, vinegar, honey, mustard, and salsa verde in a small bowl.
3. Pour the vinaigrette over the salad and toss to coat.
4. Season with salt and pepper, to taste.
5. Serve immediately. Enjoy!
